Delicious and quick Lemon & Thyme Quinoa with Prawns and Avocado.


  • 1/2 a diced Avocado
  • 100g Cooked and Peeled Prawns
  • 1 tbsp Olive Oil
  • Juice of half a Lemon
  • 2 tbsp chopped Parsley
  • Cracked Black Pepper
  • 1 Packet Celebrate Health Lemon & Thyme Quinoa


For an added kick, add some capsicum relish on top of the prawns.

  1. Peel and dice avocado
  2. Lightly sear prawns and set aside
  3. Cook Lemon & Thyme Quinoa as per pack instructions
  4. Stir in parsley, olive oil and lemon juice until evenly mixed
  5. Add cooked prawns and avocado and season with cracked pepper before serving
