Delicious and quick Lemon & Thyme Quinoa with Prawns and Avocado.
- 1/2 a diced Avocado
- 100g Cooked and Peeled Prawns
- 1 tbsp Olive Oil
- Juice of half a Lemon
- 2 tbsp chopped Parsley
- Cracked Black Pepper
- 1 Packet Celebrate Health Lemon & Thyme Quinoa
For an added kick, add some capsicum relish on top of the prawns.

- Peel and dice avocado
- Lightly sear prawns and set aside
- Cook Lemon & Thyme Quinoa as per pack instructions
- Stir in parsley, olive oil and lemon juice until evenly mixed
- Add cooked prawns and avocado and season with cracked pepper before serving
