Yummy Tomato & Basil Quinoa with Grilled Vegetables, Fetta & Olives.


  • 1 cup of Zucchini
  • 1 cup of Capsicum
  • 3/4 cup of pitted Olives
  • 100g Fetta, cubed
  • 6 Semi-dried Tomatoes, sliced
  • Fresh Basil leaves to garnish
  • 1 Packet Celebrate Health Tomato & Basil Quinoa


For added sweetness, roast some butternut pumpkin and add to the quinoa dish just before serving.

  1. Roast or grill zucchini and capsicum as desired and set aside.
  2. Cook Tomato & Basil Quinoa as per pack instructions and gently stir in all other ingredients.
  3. Garnish with fresh basil leaves before serving.
