Yummy Tomato & Basil Quinoa with Grilled Vegetables, Fetta & Olives.
- 1 cup of Zucchini
- 1 cup of Capsicum
- 3/4 cup of pitted Olives
- 100g Fetta, cubed
- 6 Semi-dried Tomatoes, sliced
- Fresh Basil leaves to garnish
- 1 Packet Celebrate Health Tomato & Basil Quinoa
For added sweetness, roast some butternut pumpkin and add to the quinoa dish just before serving.

- Roast or grill zucchini and capsicum as desired and set aside.
- Cook Tomato & Basil Quinoa as per pack instructions and gently stir in all other ingredients.
- Garnish with fresh basil leaves before serving.
